Lucknowi cuisine is celebrated for its refined cooking techniques, delicate aromas, balanced spices, and rich Nawabi heritage. It features an exceptional variety of kebabs, kormas, kaliya, nahari, kulchas, sheermal, roomali rotis, warqi parathas, biryanis, kachoris, and traditional desserts.
One of its most recognised cooking techniques is the dum style, in which food is slow-cooked over a low flame in a sealed vessel. This process allows the ingredients, aromas, and spices to blend gradually and develop a deep, distinctive flavour.
